My friend Holly came to visit this week. I had such a great time catching up with her. She moved away a couple months ago and left a big hole in my life. She has been one of my running friends for the last couple of years. It worked out that she was able to stay a couple days with me. We did so many fun things together. We got to go on several runs. She has become quite the speedster. We definitely challenge each other in our runs. We also got to do one of our favorite things. Goodwilling! When she lived her we would go several times a week after the gym. It was such a fun day. On Tuesday night we had our friends over for an appetizer/wine evening. Holly and I both love to cook and share recipes. We spent the afternoon preparing for our special dinner. She made Ina's Brownie Pudding with Anna. YUM! It was an absolutely lovely evening visiting with friends. I did something that I never do on a "school night". I went to a 9:30 movie with several of the ladies. We all wanted to see the movie "The Help" and didn't think our husbands would enjoy it very much. I am glad I drank the espresso at 3:00 PM to keep me awake for the movie but I wish that I had been able to fall asleep before 2:00 AM. I guess that is the side effect of coffee too late in the day. Holly had to head home today. It was such a good visit and I can't wait for the next one!
I am glad I cooked this on a baking sheet or I would be cleaning my oven right now!
My potpies were so good! If only the photography had turned out better.... I am very late in posting this recipe. I have had the best of intentions to make it over a week ago but my husband went on a couple work trips. I thought it would be too much for just the kids and I. Deb of Kahakai Kitchen chose the recipe for Vegetable Pot Pie. I made this last night for dinner. I loved the pastry crust in this recipe. It was very easy to work with and rolled our so nicely. I did allot of substituting in the mixture of vegetables. I also had to make chicken stock so I ended up adding some chicken breast as well. It was very tasty but will not be a weekly stable since it has so much butter and crisco in the crust. 3 out of 4 of us ate it. I still have 2 of my pies left for my husbands lunches this week. This has been a year of changes for our family. We left Ohio after 4 wonderful years and moved to a small town outside of DC. Mark started a new job, we found a church, the kids got involved in school activities, the kids got a puppy and we all started making friends. Then we found out some news. We are moving again! This SUMMER! To say the least we were shocked. Moving, again, so soon? I am so glad that we have complete trust in our God! For I know the plans I have for you," declares the LORD, "plans to prosper you and not to harm you, plans to give you hope and a future. (NIV Jeremiah 29:11) So the Friesen family is headed to Alabama this summer for 10 months. Mark has the opportunity to go become a student again! Not sure we will have lots of visitors at our new home but it is still always open to all of you. DC has been great and we have had lots of friends and family come see us so far.
We have moved again. It was a quick 10 months for us in Alabama and then we headed for another adventure. We moved back to Va. We thought this was where we would come after Marks schooling last year but it is the military and so nothing is for certain on how long or where you are going.
I am ready to put down some roots for the next couple of years. We have the kids in good schools and they seem to be enjoying it for the most part. We are busy. Busier then we have ever been before. Jonathan is in marching band and it requires lots of practices, games and competitions. The good news is that he loves it! The bad news is that our weekends are gone and most evenings too. I am so thankful that I get to be apart of the driving and watching my kids excel in there activities.
Anna is doing Cross County and really enjoying that as well. It is less of a time commitment and only has two meets and two practices a week. I am getting to help coach her age group and it is so much fun.
